What’s for dinner – panzarotti

Tonight we’re having a staple recipe in our house: panzarotti. Basically, it’s a pocket of pizza dough filled with whatever you want. I use our bread maker to make the dough and it’s a fast, easy, always satisfying meal that makes enough for lunch the next day…until our daughter gets big enough to eat her own, then we’ll be out of luck!I found the dough recipe at Recipezaar at it’s always turned out perfectly; I’ve left it with the instructions for making pizza, keep reading for how to make the Read more […]

What’s for dinner tonight

I found this recipe when I was pregnant and trying to stock our freezer with something not made with ground beef. Enjoy!Chicken EnchiladasIngredients for Cooking Day:1 cup chopped onion1/2 cup chopped green pepper2 Tbsp. Read more […]

It’s hard being away from family, and I know they miss their grandbaby like crazy (oh, and they might miss me and my husband a bit too) so I’m pretty sure that for the next couple of days, I’m just going to see her for feeding and diaper changing, and that’s OK by me. We’re having soya sauce chicken for dinner, which is the easiest, yummiest Read more […]

Nuts & Bolts

As promised, here’s my Nana’s nuts & bolts recipe. My mom modified it (she cut the butter and oil in HALF), but it’s not exactly “low cal”. However, I firmly believe that holiday treats don’t count, especially if you eat them in the company of family and/or friends. I’ve included some “helpful” pictures – if you look closely, you can see my Jolly Jumping baby in the first one.Ingredients:1 box each Cheerios, Shreddies and Crispix (also called Crispix Krispies now)1 package each pretzels, peanuts Read more […]
