What’s for Dinner – Sassy Turkey Soup

Like many of my favourite recipes, this one came from my good friend Joleen.  I’m not sure where she got it from, but I’m very glad she shared it!  This Sassy Turkey Soup is easy enough to make after work (as long as you’ve precooked your turkey), and it’s a different spin turkey soup for those inevitable leftovers once Thanksgiving is over.  Serve with some biscuits and dinner is done! Ingredients 2×14 1/4 oz OR 1 796ml  can stewed/diced plum tomatoes 2 cups low-sodium chicken broth 1/2 Read more […]

What’s for dinner – Chili

Ingredients 8 ears of corn, shucked 2 limes, quartered 2 teaspoons mild chili powder 2 teaspoons sea salt ¼ cup Cotija cheese, crumbled (or feta or grated Parmesan) Directions Cook corn on an oiled grill Read more […]

What’s for (Easter) Dinner ~ Sweet Potato Casserole

Like many of you, I’m planning our Easter dinner menu. It’s just going to be the three of us, so it’s nothing fancy, but it’s nice to have an excuse to make something a little different from our normal meals. So far, I know we’re having ham steaks, salad, and this incredibly yummysweet potato casserole that I came across on AllRecipes when I was making our Christmas menu. Be warned – the recipe below is designed to serve 4 and we still had WAY too much, so this time around I’ll just make enough for Read more […]
