<h2><span style="color: #ff00ff;"><strong>TUNA NOODLE CASSEROLE<img class="alignright" title="Tuna Noodle Casserole" src="http://i125.photobucket.com/albums/p53/chickypoo81/Blog/DSC_0940.jpg" alt="" width="276" height="241" /></strong></span></h2>
<h3><span style="color: #ff00ff;">Ingredients</span></h3>
<ul>
<li>1 can cream of mushroom soup</li>
<li>3/4 can milk</li>
<li>1 can tuna, drained and flaked</li>
<li>1 stalk celery, chopped</li>
<li>1 small onion, diced</li>
<li>chow mein noodles (the kind that are meant to be eaten as is, not the kind meant to be soaked)</li>
<li>grated cheese</li>
</ul>
<h3><span style="color: #ff00ff;">Directions</span></h3>
<ol>
<li>In a casserole dish, mix the soup, milk, tuna, celery and onion.</li>
<li>Add about a cup of chow mein noodles to the dish and stir so they are covered.  You may want to add more noodles if the casserole still looks runny (there should be some liquid left but lots of noodles in there).</li>
<li>Add more chow mein noodles to the top and cover with grated cheese (the cheese can be omitted but we love cheese so we use a lot).</li>
<li>Bake at 350F for approx 30 minutes. Let sit for about 5 minutes then serve.</li>

<p><span style="font-size: small;">Between October 18<sup>th</sup> and November 2<sup>nd</sup>, e</span><span style="font-size: small;">ach event will highlight a dish for Mom (Quinoa Pancakes ) and a dish for the babies (Sweet and White Potato Mash; see the end of the post for this recipe &#8211; I think both of my girls will love it). </span></p>
<p><span style="font-size: small;">Moms are encouraged to bring their babies to the events and will leave not only with 2 great new recipes, but  also HUGGIES<sup>®</sup> coupons and  a pair of adorable tiger ears, just in time for Halloween.  I&#8217;m guessing that some of the coupons will be for </span><span style="font-size: small;">HUGGIES® Slip Ons, their new diaper that you can just pull on your squirmy, on-the-move baby.  I haven&#8217;t tried them myself but since there is a class at my Loblaws this Saturday I may pick up a package and give them a whirl.</span></p>

<h2 align="LEFT">Sweet and White Potato Mash</h2>
<p><strong>Ingredients</strong></p>
<p>1 White potato, peeled and diced</p>
<p>1 sweet potato, peeled and diced</p>
<p>1 clove of garlic, minced</p>
<p>1oz unsalted butter or olive oil</p>
<p>¼ cup milk – use breast milk or formula</p>
<p>2 oz grated mild Cheddar cheese</p>
<p><strong>Method</strong></p>
<p>1. Pre-heat your oven to 350<span style="font-family: Symbol; font-size: xx-small;"><span style="font-family: Symbol; font-size: xx-small;">° </span></span>F.</p>
<p>2. Put the white and sheet potatoes into a saucepan and cover with water.</p>
<p>3. Bring to a boil then cook for around 20 minutes, uncovered, until tender.</p>
<p>4. Drain the potatoes, and then place them in a bowl and mash with garlic, butter and milk.</p>
<p>5. Place in a baking dish and top with the cheese</p>
<p>6. Bake for around 30 minutes, until nice and brown.</p>

			<content:encoded><![CDATA[<p>We usually eat something with the buns, but I could easily make an entire meal out of them!  With Thanksgiving just around the corner, I made a double batch yesterday so that I could have enough to take to both of the family dinners that we&#8217;ll be going to, plus a few left for us.</p>
<p>I was very intimidated to try homemade buns for some reason, but my good friend Tasha sent me her recipe and it&#8217;s so much easier than I thought it would be!  I don&#8217;t buy dinner rolls any more and it sounds very impressive when you tell people that you made the buns too.</p>
<h2><span style="color: #ff00ff;"><strong>HOMEMADE BUNS</strong></span></h2>
<h3><span style="color: #ff00ff;">Ingredients<img class="alignright" title="Homemade buns" src="http://i125.photobucket.com/albums/p53/chickypoo81/Blog/DSC_0569-1.jpg" alt="" width="247" height="176" /></span></h3>
<ul>
<li>4 tbsp Sugar</li>
<li>3 tbsp Oil</li>
<li>1 1/2 cups lukewarm water</li>
<li>1 egg</li>
<li>4 cups Flour</li>
<li>1 tbsp Yeast</li>
<li>1/2 tsp salt</li>
</ul>
<h3><span style="color: #ff00ff;">Directions</span></h3>
<ol>
<li> In bowl beat egg, sugar, oil and water.</li>
<li>Add 2 cups flour (mixed with yeast) mix until blended well.</li>
<li>Add remaining 2 cups flour and salt.  Blend well.</li>
<li>Butter top of dough and cover and let rise.</li>
<li>Shape into buns (I take about a clementine-sized ball of dough), place on cookie sheets about 2 inches apart and let rise.</li>
<li>Bake at 350F for approx 15 minutes.  Brush with butter/margarine while still warm.</li>
</ol>
<h3><span style="color: #ff00ff;">Tips</span></h3>
<ul>
<li>Depending on your mixer you should be able to double this if not triple it.  These freeze really well!</li>
<li>Since the dough rises a second time after you form the buns, err on the side of smaller buns or you could end up with kaisers instead of dinner rolls.</li>
<li>Remember, you want your dough to come clean from the edge of the bowl, but still be sticky so they are nice and light, and airy.</li>

<p>Thanks to my friend Emily for posting the link on her Facebook and letting Ashlyn and I sample some at our playdate!  I made a couple of minor changes to the original so below is how I made it, and will make it again.  This makes a double batch (I froze half) so cut it in half if you want a &#8220;normal&#8221; amount of cornbread.</p>
<h2><span style="color: #ff99cc;">Buttermilk Cornbread</span></h2>

<ul>
<li>1 cup butter</li>
<li>2/3 cup white sugar</li>
<li>4 eggs</li>
<li>2 cups buttermilk</li>
<li>1 teaspoon baking soda</li>
<li>2 cups cornmeal</li>
<li>2 cups all-purpose flour</li>
<li>1 teaspoon salt</li>
</ul>
</div>
<h3><span style="color: #ff00ff;">Directions</span></h3>
<ol>
<li>Preheat oven to 375 degrees F (175 degrees C).</li>
<li>Melt butter in large cast-iron skillet (mine is about 12 inches).  Poor the butter into a large bowl.  Stir in sugar. Add eggs (temper them to avoid scrambled eggs!) and beat until well blended. Combine buttermilk with baking soda and stir into batter. Stir in cornmeal, flour, and salt until well blended. Pour batter back into the skillet (or into a greased 8 inch square pan for a single loaf).</li>
<li>Bake in the preheated oven for 30 minutes (25 minutes for a single batch), or until a toothpick inserted in the center comes out clean.</li>
<li>Serve warm and try not to eat it all in one sitting.</li>

			<content:encoded><![CDATA[<p>This past weekend, we hosted our very first Christmas for my husband&#8217;s family.  This is the first time in six years that we&#8217;ve been in the same province as our family for the holidays and we were so excited to have everyone to our home and to prepare a traditional Christmas dinner!</p>
<p>I got this brine recipe from my Aunt Jina, who is definitely one of my &#8220;go to&#8221; people for excellent recipes.  As always, I was not disappointed!  My husband helpfully told me AFTER I&#8217;d put the turkey in the brine that I probably should have heated it first to dissolve the salt, but it still turned out perfectly.</p>
<p><span style="color: #993366;"><strong>Ingredients</strong></span><a target="_blank" href="http://images.media-allrecipes.com/site/allrecipes/area/community/userphoto/big/291244.jpg" ></a></p>
<ul>
<li> 8 cups cranberry juice</li>
<li>1 cup apple juice</li>
<li>1 cup orange juice</li>
<li>5 cups water</li>
<li>1 cup salt (I used Kosher)</li>
<li>10 garlic cloves, unpeeled and lightly smashed</li>
<li>6 sprigs fresh thyme</li>
<li>6 sprigs fresh rosemary</li>
<li>8 bay leaves</li>
</ul>
<p><span style="color: #993366;"><strong>Directions</strong></span></p>
<ol>
<li>Combine all the ingredients and place in a large pot (we used a turkey cooking bag in a bucket until the bag split &#8211; guess we shouldn&#8217;t have tried to use the one from the last time we cooked a turkey 7 or 8 years ago!)</li>
<li>Add turkey to pot making sure the brine covers turkey. Soak for 10 hrs up to 24 hrs (the rule of thumb is an hour per pound).</li>
<li>Remove turkey, RINSE and dry.  Discard brine.</li>
<li>Cook turkey until the internal temperature reaches 180°.</li>
</ol>

<p>I also tried a new &#8220;make ahead&#8221; gravy recipe from <a target="_blank" href="http://www.jamieoliver.com/recipes/other-recipes/get-ahead-gravy" >Jamie Oliver</a> and I will never make turkey gravy any other way.  I loved having it done before the meal and only needing to add the turkey drippings and bring it to a boil - since you make and freeze it ahead, you know that the seasoning is right and it&#8217;s just one less thing to worry about on the big day.  This recipe is time consuming but not hard, and is <em>so</em> worth the effort!</p>
<p>I followed the recipe with a few teeny modifications: I didn&#8217;t have any star anise and didn&#8217;t bother to get any, and I made a mistake while grocery shopping and bought thyme instead of sage (that&#8217;s what I get for leaving my list at home!) so that&#8217;s what I used.</p>
<p>Here&#8217;s what the table looked like <img src='http://notjustbabybrain.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   In addition to the turkey and gravy, there was stuffing, mashed potatoes, brussel sprouts, homemade buns, ambrosia and cranberry sauce.  We still have leftovers and it&#8217;s still a great meal!</p>

			<content:encoded><![CDATA[<p style="text-align: left;">Like many of my favourite recipes, this one came from my good friend Joleen.  I&#8217;m not sure where she got it from, but I&#8217;m very glad she shared it!  This Sassy Turkey Soup is easy enough to make after work (as long as you&#8217;ve precooked your turkey), and it&#8217;s a different spin turkey soup for those inevitable leftovers once Thanksgiving is over.  Serve with some biscuits and dinner is done!</p>

<ul>
<li><span style="color: #993366;"><span style="color: #000000;">2&#215;14 1/4 oz OR 1 796ml  can stewed/diced plum tomatoes</span></span></li>
<li><span style="color: #993366;"></span><span style="color: #993366;"><span style="color: #000000;">2 cups low-sodium chicken broth</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1/2 lb cooked turkey breast, shredded</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 15 1/2 oz (540 ml) can kidney beans, drained and rinsed</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 cup frozen corn kernels</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">2 tsp dried oregano</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1/2 tsp chili powder</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">2 tbsp fresh lime juice</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1-2 tbsp fresh cilantro, chopped (I use dried)</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1/3 cup grated cheddar cheese</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">sour cream to taste</span></span></li>
</ul>
<p><span style="color: #993366;"><strong>Directions</strong></span></p>
<ol>
<li>Puree the tomatoes (or cheat like I do and just by the crushed ones).  Pour into a large soup pot and add the broth, turkey, beans, oregano, corn and chili powder.</li>
<li>Bring the pot to a boil, stirring occasionally, then reduce heat and simmer for at least 30 minutes.</li>
<li>Stir in the cilantro and lime juice. NOTE: I prefer to serve the soup with wedges of lime so everyone can add the amount they like.</li>
<li>Serve with cheese sprinkled on top and/or a dollop of sour cream.</li>
</ol>

The baked potatoe was an impulse buy when I was grocery shopping at Farm Boy yesterday. This is my chili recipe, which is basically an amalgamation of my mom&#8217;s chili, my aunt&#8217;s chili, and what my husband and I added along the way. It freezes great so I always make extra for a night when I don&#8217;t have the time or energy to make a meal.</p>

<ul>
<li><span style="color: #993366;"><span style="color: #000000;">1 lb extra-lean ground beef</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 onion, diced</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 green pepper (this time, I used half a green pepper and half a red pepper because that&#8217;s what was in the fridge)</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 stalk celery, diced</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">lots of minced garlic and black pepper</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1/4 cup ketchup (eyeball this)</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 tbsp Worcestershire sauce</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 can each: brown beans (I like the maple ones) and kidney beans (drain and rinse them first)</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 bottle Heinz Chili sauce OR 1 can tomato soup plus 2/3 can water</span></span></li>
<li><span style="color: #993366;"><span style="color: #000000;">1 1/2 tbsp chili powder</span></span></li>

<p><span style="color: #993366;"><strong>Directions</strong></span></p>
<ol>
<li>Brown the beef in a large skillet with the ketchup, onion, pepper, celery, garlic and black pepper.</li>
<li>Drain the fat from the skillet.</li>
<li>If you&#8217;re doing it on the stovetop, add the rest of the ingredients and simmer covered for 1.5 hours, stirring occasionally.  If you use the crockpot (my preferred way), add the rest of the ingredients to the crockpot, add the meat mixture, stir and cook on low for 3+ hours &#8211; I usually cook it for 4 hours and leave it on &#8220;warm&#8221; for another hour or so.</li>

<li>Cook corn on an oiled grill over medium-high heat, turning so that it blisters evenly (without letting it shrivel and dry out).</li>
<li>Serve immediately on a platter with accompaniments in small bowls. Let everybody prepare his own by rubbing each ear with a lime wedge, then sprinkling with chili powder, salt, and Cotija cheese.</li>

<div>Like many of you, I&#8217;m planning our <strong><span style="color:#cc33cc;">Easter dinner menu</span></strong>. It&#8217;s just going to be the three of us, so it&#8217;s nothing fancy, but it&#8217;s nice to have an excuse to make something a little different from our normal meals. So far, I know we&#8217;re having ham steaks, salad, and this incredibly yummy<a href="http://allrecipes.com/Recipe/Sweet-Potato-Casserole-II/Detail.aspx"  target="_blank">sweet potato casserole</a> that I came across on <a href="http://www.allrecipes.com/"  target="_blank">AllRecipes</a> when I was making our Christmas menu. Be warned &#8211; the <strong><span style="color:#993399;">recipe below is designed to serve 4</span></strong> and we still had WAY too much, so this time around I&#8217;ll just make enough for 2. That should still leave us leftovers for a day or two, instead of a week like last time!</div>

<div>And just a little FYI &#8211; <strong><span style="color:#cc33cc;">not all sweet potatoes are orange</span></strong>. For some reason, all of the ones I&#8217;ve bought have been white, so don&#8217;t freak out when you peel them and they look like regular potatoes, like I did the first time!</div>

<div>2 more quick notes, then the recipe. 1) The picture is not mine, I apparently only took pictures of my baby at Christmas, so it doesn&#8217;t show the struesel topping. 2) The struesel isn&#8217;t necessary, so you can skip step #6 if you don&#8217;t like that sort of thing.</div>

<div><span style="color:#663366;">Ingredients:</span></div>
<ul>
<li>2-1/2 sweet potatoes, peeled and sliced <a target="_blank" href="http://images.media-allrecipes.com/site/allrecipes/area/community/userphoto/big/302014.jpg" ><img style="FLOAT: right; MARGIN: 0px 0px 10px 10px; WIDTH: 250px; CURSOR: hand; HEIGHT: 250px" alt="" src="http://images.media-allrecipes.com/site/allrecipes/area/community/userphoto/big/302014.jpg" border="0" /></a></li>
<li>1/2 and 1/4 cup packed brown sugar, divided</li>
<li>1/4 cup and 2 tablespoons softened butter, divided</li>
<li>1 tablespoon orange juice <span style="color:#993399;">(I omitted this based on comments made on the recipe as some people found it gave the dish an &#8220;off&#8221; taste, I don&#8217;t think it&#8217;s necessary)</span></li>
<li>1 pinch ground cinnamon <a target="_blank" href="http://images.media-allrecipes.com/site/allrecipes/area/community/userphoto/big/302014.jpg" ></a></li>
<li>1/2 (10.5 ounce) package miniature marshmallows</li>
<li>1/4 cup all-purpose flour</li>
<li>2/3 cup Quaker quick cooking oats</li>
</ul>

<ol>
<li>Preheat oven to 350 degrees F (175 degrees C). </li>
<li>Boil sliced sweet potatoes in water until tender. Drain. </li>
<li>In a large bowl, blend the potatoes until creamy. Stir in 2 tbsp butter, 1/4 cup brown sugar, orange juice to taste and a dash of ground cinnamon. </li>
<li>Spread the sweet potato mixture into a 9&#215;13 inch pan.</li>
<li>Sprinkle the miniature marshmallows over the top</li>
<li>Combine the rest of the brown sugar, butter, flour and oats in a small bowl and mix until it is like coarse crumbs. Sprinkle this over the marshmallows.</li>
<li>Bake at 350 degrees F (175 degrees C) until golden brown. </li>
