Christmas cookies – Ricotta cookies

I make these every year; the recipe came from a girl on a bridal forum I used when I was planning my wedding 4 years ago.  They taste like cinnamon buns!  Important note: I’ve posted the filling amounts as the recipe was given to me, but it makes so much that I only do half and still have some left over.  This is a great cookie for cookie exchanges because it makes a ton and it’s not really hard to do; it just takes a little bit of time because you need to chill the dough before you cut and bake it.  You can also make these the night before you want to bake them.

Ricotta Cookies

Crust:

  • 1 lb butter or margarine
  • 4 cups flour
  • 1 cup ricotta cheese
  • 2 egg yolks

Mix above ingredients. Make 6 balls, roll out each ball like a pie crust (using rolling pin or dowel).

Filling:

  • 4 cups finely chopped walnuts
  • 2 cups sugar
  • 3 TBS ricotta
  • 2 tsp cinnamon

Mix together and spread mixture onto dough. Roll into a log. Do this for each of the rolled out balls.

  1. Brush top of each log with an egg yolk and water mixture.
  2. Cool in the fridge for an hour (this is very important or they won’t cut properly!)
  3. Cut each log using a serrated knife.
  4. Bake at 350 for 20 min.
